What were these 8 Atlanta restaurants almost named?

From Atlanta Business Chronicle:
The culinary equivalent of a first impression, a restaurant’s name is the quickest way to stand out from the competition. Some, like Ford Fry, brainstorm with mood boards, taking inspiration from cuisine, geographical location, history—even old cookbooks. Others are less formal. Ryan Pernice of Table & Main jotted down columns of words associated with his restaurant and eventually threw an ampersand in between his two favorites. Linton Hopkins of Restaurant Eugene started by flipping through a dictionary. But regardless of their approach, chefs laid down a few hard and fast rules: The name should be easy to pronounce, no more than two or three words, in English, and meaningful to either the owners or the restaurant itself. With hundreds of possibilities left on the cutting room floor, can you figure out what could have been for these restaurants?

What to Order at No. 246 in Decatur

The meal we had recently at No. 246 in Decatur was so amazing I wanted to share.  We lucked out because we were able to grab a bar seat at 7:30 even though there were no resi's available.  These were the 3 items and we left full:

Cioppino fish stew-  You want bread to sop this up!
Ossobuco-  Yum!
Pear and Apple Crisp with cranberries for dessert.  Came in a skillet, so delish.

These are not usual menu items so get them while you can!  Menu here

Staplehouse Is About to be a Major Player in Atlanta's Brunch Game

This is great news for Intown Folks.  Check out this post from Eater:

Andrew Thomas Lee
Staplehouse.
The restaurant is adding brunch by popular demand
Old Fourth Ward's Staplehouse, the James Beard Award semifinalist for America's Best New Restaurant, is trading in Sunday dinner for brunch. An email blast sent out Thursday afternoon reads, "You asked for it, Atlanta, and we heard you! We are moving to Sunday Brunch starting in March."
Brunch reservations for the dining room and patio are already available online via Tock, and the first service is scheduled for March 6. The restaurant's brunch hours will be when "Staplehouse dishes meet Sunday morning vibes," according to a brief description on the Tock site.
Update: Staplehouse proprietor Jen Hidinger says the team tested brunch on Super Bowl Sunday and found it was a success. She shared details on what to expect:
"Brunch is a la carte," Hidinger said in an email to Eater Atlanta. "Think Staplehouse a la carte dishes meet Sunday morning eggs, all composed, maybe a shrimp and grits dish or smoked trout salad, or a quiche with salad dish.
"We are always working on new and inventive special cocktails and will offer a smaller sample cocktail list most likely on Sundays. This is new for us, so we are in development!"
Staplehouse's final Sunday dinner service is this week. After that, hours will shift from noon to 5 p.m.
In addition to the Best New Restaurant nod, chef Ryan Smith is a semifinalist for the James Beard Foundation's Best Chef: Southeast award. Staplehouse has received rave reviews from local critics, garnering three stars from the Atlanta Journal-Constitution and several picks for "best meal" in Eater Atlanta's 2015 year-end survey.
Staplehouse, located at 541 Edgewood Avenue, is the evolution of Hidinger's pop-up with her late husband and chef Ryan. Proceeds from the restaurant benefit The Giving Kitchen.

Making Macarons

I was recently lucky enough to get some macarons courtesy of Essayer.co and they were delish!!  Check out her website here (http://essayer.co/blog) and enjoy this recipe below!

When I was in Paris a couple of summers ago, I made sure to stop inside the Laduree bakery on the Champs-Elysees to get an assortment of macarons.  The macarons were the prettiest I’ve seen.  And they were delicious.  Going there is a must-do when in Paris.  It’s like getting Garrett’s popcorn when in Chicago–you just have to, even if there is a long line.
I was so excited to find that the Laduree recipe book is for sale on Amazon.com for about $35.00.  It is definitely worth ordering if you like macarons or if you know someone who does.  First of all, the book is so artistic.  It would make a lovely addition to any cookbook collection.  But most importantly, it is a wonderfully comprehensive collection of most of the delicious flavors of macaron shells and fillings sold by Laduree.  There are so many flavor combinations that I look forward to trying.

This weekend, I decided to start with the pistachio macaron with pistachio filling.  They turned out great! The main difference from the classic macaron shell recipe that I have posted on this site, is that a portion of the almond flour is substituted with pistachio flour–the recipe calls for 190 grams of almond flour and 85 grams of pistachio flour (combined with 250 grams of confectioners sugar).   Also, this Laduree recipe uses 6.5 egg whites as opposed to 4, so there is a little more batter (and more cookies) with this recipe.
The recipe for the macaron filling was similar to the Italian buttercream I typically make for macarons, but instead of whipping egg whites into a meringue like I do, Laduree’s recipe tells you to use 3 egg yolks.  I was initially concerned that it would be denser and heavier.  But I ended up loving this icing recipe!  I definitely recommend making it.
One final crucial tip: put your macarons in the freezer for 12-24 hours before eating them.  You would not believe the difference in taste between a freshly baked and assembled macaron and one that has been frozen.  It is striking.  So, allowing time for flavor maturation when making any macaron is a must.

Here is the recipe for the Laduree pistachio macaron filling:
200 grams of sugar
3 Tbsp. of water
3 egg yolks
9 oz. butter, softened
4 1/2 tsp. of pistachio paste (I found this on Amazon.com).
Whip the eggs yolks in a mixer with a whisk attachment.   Pour the sugar into a saucepan, and pour the water on top of it.  Mix slightly so that the two are combined, but then leave it be.  Heat the sugar-water mixture on the stove until it reaches 250 degrees. (You will need a candy thermometer).
Once the sugar is heated, pour it slowly down the side of the mixing bowl into the yolks, and turn the speed of the mixer to the highest speed.  It will gradually cool down as the mixer whisks air into the mixture.  When it reaches 140 degrees, you can start to add in the butter, a tablespoon at a time.  After the butter is incorporated, it should be fluffy and smooth.  You can add in the pistachio paste and food coloring to your desired tint at this time.  Mix it just until incorporated.
Scoop into an 18-inch piping bag fitted with a #10 or #12 tip, and pipe into a circle on half of the macaron shells.

Atlanta gets a few James Beard Awards and a NY Times mention:

I am going to basically repost this awesome New York Times Article but also if you haven't been yet to Staplehouse or Beetlecat you are missing out...

ATLANTA — Atlanta has long been considered the capital of the New South. It boasts the world’s busiest airport and 16 Fortune 500 companies. It is a black entertainment mecca. So many movies are shot here that people call it Y’allywood.

Getting traction as a great restaurant city has been harder. It has been tough to compete with neighbors like Charleston, S.C., New Orleans or that sexy food upstart, Nashville. As a national food contender, Atlanta never had the culinary firepower or customer base of New York, Los Angeles or Chicago. Diners made do with a parade of meals at local or national chains, punctuated by the occasional steak in a pretty room.

But now, as the nation’s infatuation with Southern food matures and Atlanta’s recession-battered economy recovers, a city that often looked over its shoulder for culinary validation and inspiration is coming into its own.

Tabla- Great Indian Food in Midtown

Can't say enough about the great meal we had here!  Modern, clean, nice new space, great bar.  We had a "thali" which allowed us a few sides for only $12 for lunch.  We asked out knowledgeable server for a substitute from the typical chicken Masala and we tried the Chicken Balti, which was delicious.  We were supposed to take the rest home but it was so yummy we had to stuff ourselves.  This spot is great for dinner and they also do 1/2 off bottles of wine on Tuesday's.  In the 77 12th Street area by Crescent Avenue intersection.
